Probably you have the same experience. When packing your stuff for a day at the beach. Don’t you experience this vibe, this adrenaline? And potentially with a touch of impatience. To get to the beach a.s.a.p.? All this to have this perfect spot in the sun. By yourself. With this need for a bit of speed. In mind. I have written a recipe. That hopefully is easy to execute. Furthermore I wish you a great day at the beach! With a cool beer or a zesty Tonic on Ice. And great company. At your side
INGREDIENTS
- 1/2 Cup of freshly picked Cilantro leaves
- 1 Tin of Tuna fish (in water)
- 1 Apple
- 1/2 Lemon
- 2 Eggs
- 1 tbs. of Greek Yoghurt
- Salt & Pepper
- 1 tsp. of Curry Spice-Mix
- 2 Slices of Bread
TO SERVE (OPTIONAL)
Fresh Cilantro (Coriander) ☜☟☞ Parsley
1 tsp. of Curry Spice-Mix ☜☟☞ 1/2 tsp. of Mustard
1 tbs. of Greek Yoghurt ☜☟☞ 1 tbs. of Bulgarian Yoghurt or Skyr
TOOLS
- Sieve
- 2 Clean Towels
- Knife
- Spoon
- Cutting Board
- Pestle & Mortar or Blender
- Toaster or Grill
- Bowl with Lid
steps
- Wash the cilantro leaves and let them dry in a clean towel
- Cook the eggs (4 min.) and cool them off in cold water
- Toast 2 slices of bread. And store them in a tightly wrapped clean towel
- Peel the eggs
- Drain the water from your can of tuna
- Wash the apple. Cut the fruit in tiny pieces.
- Cut the lemon and half. And sprinkle the apple pieces with a tiny bit of squeezed lemon
- Slide your tuna, pieces of apple, cilantro leaves, eggs in a mortar or blender
- Add 1 tbs. of greek yogurt to the lot
- Mash, crush or blend the mix
- And season with salt & pepper and a tsp. of curry spice-mix
- Pour your tuna apple salad into a bowl. And cover it with lid
- When at the beach. Give the salad a good stir before spreading your toasted slices of bread
