Spicy Potato Wedges are the best. My preference is to marinate cooked wedges of Potatoes in chipotle spices infused oil. And roast them after they had a bit of rest. In a steaming hot skillet

Probably you have had Patatas Bravas. When enjoying some sun in Spain. Or ordering some Tapas at your local Spanish Bar. Patatas Bravas actually means Spicy Potatoes. My spicy Potatoes are marinated with Chipotle Spices. This mix is a blend of powdered Peppers, smoked Paprika, Garlic, Coriander and more. And due to this marinade,  each potato wedge is fully infused with spiciness. No better hot dish to eat on a sunny day!

ingredients

  • 6 Potatoes (ask in store for the right sort)
  • 2 tbs. Chipotle Spice-Mix
  • 2 Cups of Oil

TOOLS

  • a Knife
  • a Fork
  • a Teaspoon
  • a Cutting Board
  • a Saucepan
  • a Skillet
  • a Lid or Plate 
  • a Spatula
  • a Sieve or Colander
  • a Bowl
  • a Jar (for Marinade)
  • Optional: an airtight container to store leftovers

Preparation Part 1: 60 min.

  1. Wash Potatoes
  2. And let them soak for at least 60 minutes in a bowl
  3. Cover bowl with Lid or Plate
  4. Fill Jar with Spices and 1 cup of Oil 
  5. Let this Marinade rest in the fridge

Preparation Part 2: 90 min.

  1. Turn on the heat
  2. Fill Saucepan with plenty of water
  3. Add Potatoes to Pan
  4. Boil Potatoes (boiling time depends upon size of the Potatoes)
  5. Use Fork and check largest Potato whether it is done
  6. If so, the rest is good to go
  7. Rinse boiled potatoes with cold water
  8. Sieve Potatoes
  9. Store them in covered bowl in Fridge for at least 60 min.

Finalisation: 30 min.

  1. Cut each Potato in 4 Wedges (by slicing from top to bottom)
  2. Place all wedges in a Bowl
  3. Pour Marinade into Bowl
  4. Cover Bowl with Lid or Plate
  5. Give the Bowl a good shake
  6. Turn up the Heat
  7. Pour 1 cup of Oil in Skillet
  8. When you get a sense of the smell of warm Oil
  9. Add the marinated wedges to the Skillet (do this with care)
  10. Wait a few minutes 
  11. But keep checking the Wedges do not get burned
  12. Give the Skillet a few good a shakes
  13. Cover the Skillet with a Lid or Plate
  14. And wait a few Minutes
  15. Repeat steps 11-14
  16. The Chipotle Wedges are ready when all sides have this crunchy outlook
