Up north of Holland there are a few islands called Waddeneilanden. And Schiermonnikoog is my favourite. When you like to bike long lanes just behind the dunes. And eat good food, this holiday destination might be your next. By accident I tailored this traditional Dutch dish. For the reason I forgot to buy some milk. To make pancakes. Instead I used what was left in the fridge. That was a carton of full fat Yoghurt. Compared to Milk, Yoghurt has a fresh bite. And this freshness is not what you want from a Dutch Pancake. So I compensated the absence of warmth with the addition of Honey and lots of Spices. Like grounded Anise Seed, Cinnamon, and 8 more. The blend is not new. It’s called Dutch Spice Mix. And to buy at special stores. And in future at my new shop.
The good thing that came out of this Yoghurt experiment. Was the fluffiness of each Pancake. And with fluffiness I mean a light and airy substance. That is easy to deal with in the early morning. Before you start a day with a lot of to do’s on your list
ingredients
- 1 cup of yoghurt (French or Greek)
- 1 cup of flour (pref. soft flour)
- 2 eggs
- 2 tsp. of honey
- 1 tsp. of Dutch spice-mix
- 1 tsp. of baking soda
- 1 tbs. of Oil
- Optional: Parmesan Cheese
alternative ingredients

Dutch spice mix ☜☟☞ cinnamon + a pinch of salt + a few grinds of pepper
honey ☜☟☞ 2 tbs. of sugar

TOOLS
- a Skillet
- a Lid or a Plate
- a bowl
- a whisk
- a teaspoon
- a cup
- a spatula
- Optional (a grater to grate Parmesan Cheese)
steps (PREP. & ACTUAL COOKING)
- Add yoghurt to bowl
- Break eggs above bowl
- Add baking soda
- Add spice-mix
- Add honey
- Add flour
- Give the lot a good whisk
- Turn on heat
- Place skillet
- Pour oil in skillet
- Give your pancake dough another rounds of good whisks
- When you smell hot oil
- Carefully pour a cup of dough into your skillet
- Give your pancake a bit of time whilst getting “roasted”
- When you see the edges of the pancake curl
- Use your spatula
- And try to flip your pancake
- Probably the first time will not go as hoped for
- If your flip failed. No worries, make a new pancake
- In case your flip was successful, cover your skillet with a lid or plate
- Wait a minute
- Check the bottom of your pancake
- When its dry and colouring brown
- Serve it directly
- Optional (top your Dutch pancake with freshly grated parmesan cheese)
- Store your leftover dough in an airtight container or glass
