This mellow hot sauce is perfect with hake, cod fish or shortly boiled crayfish. And will give this subtle white meat a full flavour. That is strong and hot. But not overwhelming. You would need a perfect balance of sweet & sour. And a mellow version of a hot sauce will provide you this ultimate marriage. You eat mellow hot sauce straight from the fridge. And you can store a closed jar or container for 2 week. Probably needless to say; this sauce is best on day 2

INGREDIENTS

  1. 4 tomatoes
  2. 1 paprika
  3. 1/2 red jalapeño pepper
  4. 1/2 red pepper
  5. 1/2 zucchini 
  6. 2 red onions
  7. 1/2 cup of vinegar
  8. 20 grams of cream butter
  9. optional: salt & pepper

alternative ingredients

zucchini ☜☟☞ 2 small carrots

cream butter ☜☟☞ 1/2 cup of olive oil

TOOLS

  • a Knife
  • A spatula or spoon
  • a Cutting Board
  • a clean kitchen towel
  • A casserole or pan with a thick bottom
  • A lid or plate
  • a blender
  • a jar or container with lid

steps (PREP. & ACTUAL COOKING)

  1. Wash & towel dry all veggies
  2. Peel onion 
  3. Cut bare onion in small cubes
  4. Cut paprika and peppers open
  5. Undo seeds
  6. Wash your hands 
  7. Store halves of peppers you will not use for this dish
  8. Turn on the heat
  9. Let butter melt in pan
  10. Add onions first
  11. Let them glow, before you add the rest of all veggies
  12. Stir wel
  13. Close lid
  14. Let the combination of melted butter and vegetable juices do their work
  15. When the juice is boiling
  16. Turn the heat a bit
  17. Let your sauce simmer for 15 min.
  18. In case you have added carrots to this party
  19. Pick the biggest chunk of carrot 
  20. Check whether is is done
  21. If so, turn of the heat
  22. Let the closed pan cool off for 15 min.
  23. Place closed pan in fridge
  24. Let it come to rest for at least 60 min.
  25. Pour the lot in a blender
  26. Store in jar or container
